sauce
- 125 grams whole fresh red chilli, (the smaller the hotter, adjust to suit)
- 250 grams sultanas
- 4 pieces fresh ginger root sliced, equivelent to 4x10 cent coins
- 8 cloves garlic
- 2 teaspoons salt
- 360 grams white vinegar, 1.5 cups
- 500 grams raw sugar
- 250 grams water

Recipe's preparation
- Place all ingredients into TM bowl and process on speed 8 for 20 seconds. Cook for 10 minutes on Varoma on speed 2. Scrape sides and cook for a further 40 minutes on 100c on speed 3.
Pour into sterilized bottles and seal. - General Tips
You can thicken this sauce by increasing the cooking time or make it 'chunkier' looking by decreasing the initial processing time.
I have bottled it and it has always lasted 6 months, but I am sure it would last longer

Beautiful flavours I did adjust the amount of chili and substituted a red capsicum to make up the difference. Next time I'll chop the capsicum and drain before adding admin I think it made it a bit runny so I cooked it again for 10 mins Veroma and it's a good consistency. I also cut back a weeny bit on the sugar otherwise it may have been too sweet having used capsicum which I find set anyway. Made 750mls of sauce consistency.

Just made this with 180 g of chilli and adjusted other ingredients slightly. This was the output and I reckon it would have cost well under 10 dollars. "No counter-clockwise operation"

I make this sauce all the time.... By far the best recipe I have come across. I add extra garlic and ginger and reduce sugar to 500g... Never add the water and extend the cooking time by 10-20mins, depending on the consistency you prefer, and ALWAYS turns out perfect! Can not recommend the recipe enough. Please do not hesitate to try it.

Great recipe, I also made this with home grown chillis. Per other comments, I reduced the sugar to 500g and also reduced the water to 100g.
I cooked it for an additional 10 mins but it is still pretty liquid (a pouring sauce rather than a spooning sauce consistency)

Started cooking this sauce & all I could smell was that delicious aroma of sweet chilli! Thanks for the recipe. I added another 10 minutes to thicken the sauce a bit more. Best thing about the sauce is I’m using home grown chillies.

For a great alternative try using about a third of the recommended chillies (deseeded) and substituting prunes for the saltanas. It is an awesome BBQ sauce!

So yummy. My whole family love it his sauce. My kids love making their own philly chilli cheese. I also reduced the amount of sugar.
Never buying sweet chilli
Never buying sweet chilli sauce again! Husband was begging for me to make this! He absolutely loves it. I added rapadurra sugar 500gms instead of regular which meant it turned out darker, but stilll delicious. Next time I won't deseed any of the chillis, husband loves it really hot.

Delicious!!!! I doubled the recipe and add 300 G of chili, didn't have enough sultanas so added diced datesAlso used red wine vinegar instead as had run out of white.
Definately a sauce consistency, if wanting as a dip I'd stick to making the 1 quantity and cook for longer.

Delicious! Just as the name
Delicious! Just as the name says. Mine turned out very dark, but I'd say this was because I used Raisins as I didn't have any Sultanas. I'll use Sultanas next time I think, just to compare. I might remove more seeds from the chillis next time too but will definitely be using this recipe from now on. Thanks.
BTW: Garlic Cloves: I used 3 very large ones and that was plenty.

SUGAR - the last two batches I've made with 500g sugar, will reduce again next batch but cook longer to thicken it up a bit. 500g results in a runnier sauce, but that suits me with the bottle I use.
I'm concerned about reducing too much as there's very little salt so the sugar is acting as a preservative - isn't it?

I would use the same amount
I would use the same amount of Chillies but maybe some that arent so hot. I grow my own so they are not overly hot and they are just right. maybe try adding some green chillies as well?
