If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Add flour and cook 7 minutes, Varoma, speed 3...whilst...

Season with salt and pepper to taste.

I'm a new Thermomix user and was looking for an easy, basic white sauce to replace my stovetop one. This is spot on, though I found speed 2 worked better than 3 for cooking - perhaps because I doubled the recipe... I have a TM31 so can't use scales while cooking - I just poured the milk through the hole 1/2 cup at a time (doubled recipe) every minute-and-a-half or so. Thanks!

Whenever I make white sauce I
Whenever I make white sauce I always start by adding a pinch of curry powder to the butter and flour. Gives it a hint of flavour and a tinge of colour. Sometimes I add some fresh herbs and grated cheese for something different. Very versatile recipe.
Works well when you double the quantities also. Family love it.
