  • 250 g sweet potato, cut into 3-4cm pieces
  • 1 tbsp coriander seeds
  • 1.5 tbsp cumin seeds
  • 6 black cardamom pods
  • 10 whole cloves
  • 2 tbsp Kashmiri chilli powder
  • 1 tbsp ground turmeric
  • 2 tbsp ground cinnamon
  • 1 tbsp salt
  • 60 g brown sugar
  • 80 g ginger paste
  • 200 g garlic infused olive oil

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. 1. Weigh 500g water into mixing bowl and insert simmering basket.
    2. Place sweet potato pieces into simmering basket.
    3. Steam sweet potato 10mins/varoma/speed 4. Prolong time by up to 5 mins if necessary until cooked through.
    4. Discard water from mixing bowl and place cooked sweet potato into bowl.
    5. Place all remaining ingredients into mixing bowl and blend 20 seconds/speed 9 or until smooth.
    6. Transfer into a sealable sterilised jar and top with extra olive oil to preserve.

Tip

This low fodmap curry paste also contains no nightshades, so is suitable for those with this intolerance also.
Use this curry paste in place of Tandoori paste in any specified curry recipe or as a curry base for your own recipes. Best used in 90g portions. Can be frozen for up to 3 months and kept in refrigerator up to 2 weeks.
Omit chilli powder for a mild but flavorful paste.
