Garlicky White Bean Dip

  • 5 g olive oil, (1teaspoon)
  • 60 g onion, (1 small)
  • 1/2 teaspoon rosemary leaves
  • 1 clove garlic, (small clove)
  • 400g can Can of Cannellini Beans, drained and rinsed
  • 10 g anchovy fillets, (3-4 fillets)
  • 20 g parmesan, (finely grated)
  • 10 g water
  • 10 g EVOO (extra virgin olive oil)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1.      Add oil, onion, rosemary & garlic to TM bowl - process 3s/sp9

    2.      Scrape down - cook 2min/980C/sp1.5

    3.      Add beans, anchovy, cheese, water - process until smooth 3s/sp8; scrape down; 3s/sp8


    4.      Add EVOO and S&P to taste - process 3s/sp8

Serve as a dip with crackers or crudites.

Serve on toasted baguette slices together with prosciutto-wrapped steamed asparagus as a light meal for two people.

Serve as an accompaniment to grilled fish.

Keeps for up to 5 days in the fridge.

I used Parmesan that I had previously grated and kept in the freezer.
