Chop cheese 3 sec/speed 8 then set aside.
Melt butter 2 mins/100/speed 2.
Return cheese to bowl and add all remaining ingredients. Cook 10 mins/90/speed 4.

Delicious! I halved the recipe to make a cauliflower cheese for three. Added a clove of chopped garlic to the butter (could chop first in TM) and a tsp of Dijon Mustard plus salt and fresh ground pepper to the mix. Gorgeous!

Best thermomix cheese sauce ever. Thank you Mellyc for posting this. I have used it in every conceivable way, with many different cheeses. It's a 5 star winner never a fail.
Just thought I would add, I have frozen left over of this sauce and it thaws beautifully over gentle heat.

4th time I've made this, perfect each time. For those asking, I've successfully frozen it. I have used as follows: 1) Pan fry zucchini, mushroom, roast garlic, added fresh cherry tomatoes, cooked spiral pasta then topped with this sauce - perfect. 2) Used in lasagna, as mentioned better than bechamel. 3) Used as a room temp dip with celery, carrot, grisini, cucumber - grandkids love it. 4) Over gozlems & anything with fillo pastry & froze the rest. Thank you so much for this recipe, it's base is perfect & very easy to adapt. So far I've used 3 different cheeses including provolone, always added black pepper & depending on what I'm cooking, seeded mustard. Seems to me that as long as the quantities are right this dish will always be perfect.

This recipe made so much cheese sauce, I found it was way too much and even after four people have had some on our vegetables for Christmas lunch I have a lot left. I should be able to add it to another meal so it won't go to waste. It tasted ok but not like a traditional old fashioned homemade sauce.

We just had a roast pork and veggies for dinner and had the inlaws over and it's the best cheese sauce EVER!
My husband doesn't 'normally' like cheese sauce cos he doesn't like the ones from the packet.. We convinced him to have a try of this one and he really enjoyed it!!
Even our 3yo daughter was scooping it up with her finger at the end of dinner so she could get it all!
Going to try it with a chunky steak pie and put this on top so we can have a steak and cheese pie!

I made this for my son tonight to go on his pasta. I only needed a very small amount so I used 5g of butter and flour, 35g of cheese and 50mls of milk.. Cooked for 4mins/90*/speed 4. Turned out great!

YUMMO!!! my consultant recommended this sauce when I mentioned wanting to make mac & cheese for my kids in my very new thermi & it was AMAZING. So thick & cheesy, I mixed it through a 500g bag of cooked macaroni pasta & it made 10 decent sized serves! That's a lot of leftovers so my two children were very impressed lol

I did 40% of the ingredients, ie: 100 milk, 20 flour, 20 butter. I cooked it for 6 mins and was lovely. Saved to my favourites.
