  • 1 can green pepper, corns
  • 100 g thickened cream
  • 5 gcorn flour
  • 2 tsp mustard
  • Salt to taste

Recipe's preparation

  1. Place one tbsp of the green peppercorns into the TM bowl and pulverise for 5 sec speed 7. Scrape down the sides of the bowl.

    Place in all remaining ingredients except the remainder of the can of green peppercorns and cook for 3 mins 90 degrees on speed 3.

    Add the remainder of the can of green peppercorns and stir in reverse speed 1 for 5 secs.

    This is great on steak or vegetables.

    This is delicious! My husband is very fussy with his steak sauces and loved this one very much. The only thing I did differently was reducing the amount of peppercorns and adding a good splash of worcestershire sauce. I kept it in the Thermomix until the last minute to keep it warm.

    I made this for the first time tonight to go with a steak. Was delicious in flavour but found it wasnt hot enough once ready?? Has anybody else found this too? Should I just increase the heat and time a little??

    I've never been allowed to make sauce for my husband's steak before (for fear I will wreck it!), with this recipe, he leaves me to do it and now concedes it is probably better than the sauce he used to make. It makes a lot of sauce to spare for us so he usually has to have it 2 nights in a row. He never complains!

  • The 55gm tin mentioned above

    The 55gm tin mentioned above holds 30 grams of drained green peppercorns. I have just made it myself, but as I needed a larger mixure, I just added extra cream, cornflour and mustard. However, I find the mustard flavour a bit overpowering, so I will cut that back next time. It is a lovely consistency.
