mornay sauce - this makes enough to cover 1 large lobster

  • 60 grams Tasty cheese
  • 300 g Milk
  • 1 bay leaf
  • 1 thick slice of onion
  • 6 Peppercorns
  • 30 g Butter
  • 2 heaped tbsp plain flour

Recipe's preparation

    mornay sauce
  1. :

     

  2. add cheese blitz for 10sec S8 - remove and set aside

  3. place milk, bayleaf, peppercorne and onion in tm bowl and cook T90, S4, Counter-clockwise operation for 5 mins, remove to a jug

  4. put butter and flour into tm bowl and cook at temp 90, S4 for 5 mins.

    you may need to scrape down the sides at least once during this process

  5. add the cheese and strain milk mixture thru the tm basket into the tm bowl and continue cooking for 4 mins, spped 4 temp 90 or until desired consistency is reached

    I used homemade fish stock and powdered milk along with onion and garlic, peppercorns, bay leaf. Continue with rest of recipe.
    Tasted delicious - poured over fish in pie ( cooked in pie maker).

    We used it for oysters - sprinkled a little extra cheese on top and popped them under the grill - perfect! Very easy to follow for a newbie too (had my thermy for just over a week) - thanks tmrc_emoticons.)

    I do use about half an onoin and use parmesan cheese.

    have tried to get step one removed but no matter how many times i edit the recipe that step stays.  not very confusing if you actually read the entire recipe,it shouldnt be to hard to work out that it was repeated.  will fix the recipe as soon as the mods get back to me about why i cant change the method
