  • 50 grams brown onion, (cut into chunks)
  • 20 grams unsalted butter
  • 1 teaspoon garlic paste, (TM recipe)
  • 200 grams mushroom, field, (sliced thickly)
  • 60 grams white wine or red wine, (see tips)
  • 1 teaspoon Vegetable stock paste, (TM recipe)
  • 40 grams cream
  • 1 teaspoon cornflour

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Mushroom Sauce
  1. Add onion to Closed lid
    Chop 5 seconds, speed 5
    Scrape down sides of Closed lid
    Add butter, garlic and mushrooms to Closed lid
    Place TM Lid and MC onto Closed lid
    Saute 3 minutes, 90 degrees, Counter-clockwise operation speed 1
    Add wine to Closed lid
    Place TM Lid (No MC) onto Closed lid
    Cook 5 minutes, 90 degrees, Counter-clockwise operation speed 1
    Add vegetable stock paste, cream, cornflour and pepper to Closed lid
    Place TM Lid (No MC) onto Closed lid
    Cook 4 minutes, 70 degrees, Counter-clockwise operation speed 1
    Serve immediately or keep warm in ThermoServer until required

Tip

If you don't have garlic paste prepared, add 1 clove of garlic with the onion.
If you don't have vegetable stock, add a sprig of rosemary or thyme and a pinch of salt.
As a general rule, use white wine for chicken or pork dishes and red wine for red meat dishes. Having said that I often use white wine when serving with steak, but never use red wine when serving with chicken.
If the sauce is not thickening, add a little more cornflour.
