Recipe's preparation
1.Peel lemon rind into thermomix2.Add sugar and grind on speed 9 for 10 seconds3.Insert butterfly and rest of ingredients4.Cook for 14 mins, 80 C, speed 2-35.Check to see if mixture coats back of spoon, if not cook for 2-3 mins longer6.Pour into sterilised jars and chill until thickened

Tip
If you like some peel through your lemon butter, blitz the peel first before adding the sugar and reserve some to add back in at Step 3.
