If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Place all ingredients into TM bowl and cook for 5 minutes, 70 deg, speed 4.

Tip
This sauce is perfect for low carb healty fat (LCHF) way of eating. Use it to top vegetables (cauliflower cheese is great) or on top of steak or chicken.
If you'd like a thicker consistency, cook for an extra 2-3 minutes, 70 deg, speed 4 with MC OFF.
The sauce will also thicken further as it cools down.

I wonder if you used thickened cream instead of pouring cream? I cooked for extra 3 minutes but still didn't thicken much. Also was much to splashy to take the lid off even after 7mins.

I LOVE this sauce! I add it on top of grilled...
I LOVE this sauce! I add it on top of grilled chicken and steamed veg for the perfect LCHF meal. Tonight I added left over toast chicken, bacon and onion and mixed it through spelt pasta for the kids. So versatile!

Made this tonight, added a tablespoon of Dijon mustard and teaspoon of onion flakes. Delicious!!

I decided to make this but
I decided to make this but had no cream on hand, so I used milk. I used 300gm full cream milk, 2tbs corn flour (I mixed this with a little of the milk to avoid lumps). I cooked it for 6 minutes (same speed and temp). It was nice and thick and creamy, not the mention easy and quick. I served it over pasta and steamed chicken for a super quick dinner.
