Red Pepper Marmalade

  • 6 piece red peppers, cut into eighths
  • 3 piece whole onions, cut into quarters
  • 250ml g water
  • 250 g vinegar, malt
  • 3 tablespoons Mustard seeds
  • 3 cloves whole cloves
  • 450 g sugar
  • 2 tablespoons balsamic vinegar, to add once reduced before bottling

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Red Pepper Marmalade
  1. Steralise jars with lids
  2. Cut 6 red peppers into eighths. Place in Veroma.
  3. Place 3 onions into mixing bowl and chop 2sec/speed6. Add to Veroma with red peppers. Spinkle with salt and stir to combine. Set aside for an hour to dry out for a thicker marmalade.
  4. Place sugar, water, mustard seeds, cloves and malt vinegar, and reserved red pepper/onion mixture into mixing bowl. Place Veroma dish without Veroma lid instead of messuring cup onto mixing bowl lid, then cook 60 mins/120C/Counter-clockwise operation/speed 0.5.
  5. Add 2 table spoons of vinegar into mixing bowl. Stir through with the add of a saptula, then cook 2min/100C/Counter-clockwise operation/speed 1 or untill thickened. Carefully pour hot marmalade into steralised jars, seal and invent for 10 minutes. Cool completely, then store in pantry until ready to serve.

Tip

If you would like a thicker mamalade add 2 table sppons of cornflour when you add your balsamic vinegar.

Be sure to use clean/sterilised utensils and jars for best results.

Marmalade will keep in a stealed, sanitised jar for 3 months. Refriderate after opening.

Serve with a cheese platter, cold meat or burgers. Enjoy!
