  • 30 grams carrot, Roughly chopped
  • 30 grams Celery, Roughly chopped
  • 30 grams red or brown onion, Peeled & quartered
  • 20 grams Currents
  • 20 grams olive oil
  • 250 grams Quality red wine
  • 10 grams lbeef stock concentrate
  • 130 grams water
  • 10 grams tomato paste
  • 2 level teaspoons brown sugar
  • 3 sprigs thyme leaf, fresh >76

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Add carrot, celery, onion and currents to mixer bowl. Chop for 3 sec/speed 2/ Mc off
  2. Add olive oil and cook 5 min/100/speed 2 Mc off scrape mixer bowl down
  3. Add remaining ingredients except butter to mixing bowl. Cook for 15 min/varoma/speed 2/mc off
  4. Using a nut milk bag or fine sieve, strain the mixture into a jug/bowl retaining the liquid and discarding the rest. Rinse out mixer bowl
  5. Return liquid to bowl and cook for 6 min/varome/slow speed Gentle stir settingMc off. Check consistency and keep cooking in 3 min increments until desired consistency is reached. Make sure you are watching it.
  6. Allow to cool for 5 min. Add butter and mix for 30 sec/speed 3/mc on.

    When you say Quality Red Wine do you mean quality box wine - red? or does this really need to be a $20+ bottle?
