Recipe's preparation

  1. Place eschallot and garlic in the bowl and chop for 5 secs/speed 5.
  2. Scrape down sides and add butter. Cook for 4 mins/varoma temp/speed 1 with the MC removed.
  3. Add all other ingredients and cook for 20 mins/varoma/speed 1with the MC removed.
  4. Strain before serving.

Tip

The better quality ingredients, the better tasting reduction you will have

This makes about 125ml or a bit more than 1/2 cup of sauce. You can freeze what is left (pfft…yeah funny, I know - you WILL want to eat it like soup) and just defrost and reheat gently with perhaps another splash of wine to refresh it….just made that bit up but that’s what I did.
