Steak Spice Rub (Spicy Mexican)

Ingredients

Spice Mix

  • 1 teaspoon rock salt
  • 1/2 teaspoon Peppercorns
  • 2 teaspoons dried chilli flakes
  • 2 tablespoons Dried Onion Flakes/Granules
  • 1 teaspoon dried garlic granules
  • 1 teaspoon dried thyme
  • 2 tablespoons dried oregano
  • 2 teaspoons cumin seeds
  • 5 tablespoon breadcrumbs

Prepare to use

  • extra virgin olive oil

Recipe's preparation

    Prepare the Spice mix
  1. This recipe will make a small jar of mix, enough to prepare 6 large steaks.  Ensure that your bowl is very dry before starting especially if you are planning to store your spice mix.

  2. Place salt, peppercorns and chilli flakes int the mixing bowl and mill for 3 sec / speed 10.

  3. Add all remaining herbs/spices (excluding breadcrumbs) and mill for a further 4 sec / speed 10.

  4. Add breadcrumbs and mix for 4 sec / speed 5.

  5. Place spice mis into an air-tight container until required (if kept dry and cool is should last as long as your dried herbs)

  6. Prepare for use
  7. Mix 2 tablespoons of the Spice Mix per 350g steak with enough extra virgin olive oil to make a sticky paste.

  8. Spread the paste evenly over both sides of the steak then cover with cling-wrap and place in the gridge for at least 30 minutes (preferrably around 1-2 hours) to infuse the flavours.

  9. Uncover steaks and roughly remove most ofthe spice rub prior to cooking the steaks or the excess spices will burn and overpower the wonderful taste of the spices.
