Sweet Potato Hummus- By My New Roots

Ingredients

Sweet Potato Hummus

  • 700 grams Roasted Sweet Potato (Skin removed), Bake 2 sweet potato's in the oven with their skin on
  • 2 cans Chick peas (drained)
  • 1 tablespoon ground cumin
  • 3 tablespoons olive oil
  • 2 cloves garlic
  • 1 pinch sea salt
  • 1 teaspoon Cayenne Pepper (Optional)
  • zest of 1 lemon
  • juice of half a lemon
  • 1 tablespoon Water if needed

Recipe's preparation

    Sweet Potato Hummus
  1. Step 1How to roast the sweet potatoes place with the skin on on a tray with baking paper and cook in the oven at 200 Deg for around 45 minutes to 1 hour, depending on their size until they are soft in the middle.  Let the sweet potatoes cool down so that you can easily remove their skins – they should just peel off.

     

  2. Step 2 : Zest one lemon using your potato peeler (removing the yellow skin only, wrap in a paper towel to remove moisture) to grind the lemon zest in the TMX add to a completely dry bowl for 1min speed 9.Closed lid

  3. Step 3: Add in 2 garlic cloves and mince on speed 7 for 3 secs Closed lid

  4. Step 4: Add the drained chickpeas that have been taken from the tin and drained and rinsed in the TMX basket.

  5. Step 5Squeeze half a lemon onto the lid of the Thermomix bowl, using the MC downturned to allow the juice to incorporate and the pips to be discarded.

    Add remaining ingredients

    + salt and pepper, olive oil, ground cumin and

    cayenne pepper (if using )

     

     

     

  6. Step 6: Cut sweet potato into large chunks and place into the Thermomix with the remaining ingredients setting the timer for 2 mins speed 7 Closed lid Stopping regularly to scrape down and help along with spatula. ( you may need to add the tablespoon of water at this stage check the consistency it should be a fluffy paste)

  7. Serve with a drizzle of olive oil, sprinkle of cracked black pepper.

     

    It is a brillant after school snack for the kids with chopped veggies or crackers, a beautiful sandwich or pizza spread.

    This recipe produces a very large serving of dip and it will keep in a Tupperware container in the fridge for a week.

    This is delicious. I halved the ingredients and only needed to mix about a minute. I also left out the cayenne pepper but added some of my TMX chilli sauce. Very tasty. tmrc_emoticons.)
