Thick hollandaise sauce

Ingredients

4 portion(s)

Sauce

  • 150 grams unsalted butter
  • 5 egg yolks
  • 30 grams lemon juice, (Approx 1 lemon)

Recipe's preparation

  1. 1. Place cubed butter into bowl. Cook 2 minutes/50deg/sp4, or until butter is completely melted. Set aside. No need to clean bowl.


     


    2. Insert butterfly. Place egg yolks and lemon juice into bowl. Place lid on with MC in place. Turn on TMX 7 min/90deg/sp3 and pour melted butter onto the top of MC, allowing it to slowly drizzle into the bowl, creating the perfect emulsion.


     


    Serve with poached eggs, steamed salmon, vegetables or asparagus spears.
