Score each tomato lightly as if you are cutting them into quarters and place into a large bowl and cover with hot water, leave to soak for 15 mins then peel the skin off.
Place garlic and ginger into mixing bowl and blend 5 sec/speed 5.
Add tomatoes , sugar and lemon juice into mixing bowl and cook 28 mins/Varoma/Speed 1, placing simmering basket instead of measuring cup onto the mixing bowl.
If tomatoes are not peeling, try pouring a little boiling water into the bowl or trim the skin off with a knife.
