- 1 tsp TM Vegetable stock paste, or to taste

Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation
1. Place TM simmering basket lined with several layers of cheesecloth into TM bowl and weigh yoghurt into it.
2. Remove simmering basket, place into a bowl, cover, refrigerate overnight, then remove cheesecloth with drained yoghurt.
3. Cut cucumber in half lengthwise, remove seeds, cut up roughly and place with vegetable stock paste into TM bowl.
4. Chop 5-10 seconds speed 5, remove, placing into cheesecloth lined simmering basket over a bowl and refrigerate at least 30 minutes.
5. Add garlic and herbs to clean dry TM bowl; chop finely 5 seconds speed 7.
6. Add drained cucumber & yoghurt, lemon juice and pepper and mix 5-10 seconds speed 3 until combined.
7. Place into serving bowl and refrigerate several hours or overnight to allow the flavours to develop.
8. Serve with pita bread triangles, either fresh, or crisped for 10 minutes in a moderate oven before cooling.
