XO Sauce (Thermomix Singapore)

  • 260 g cooking oil
  • 60 g dried chillies, deseeded, soaked to soften
  • 60 g shallots
  • 2 birds eye chillies, to taste
  • 25 g garlic clove
  • 50 g dried shrimp, soaked for 1 hour, drained
  • 50 g dried scallops, soaked for 1 hour, drained
  • 1 teaspoon brown sugar
  • 1 teaspoon soy sauce
  • 1.5 tbsp Chinese Rice Wine
  • 2 teaspoon fish sauce
  • 20 g chilli flakes

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Add 260g cooking oil
  2. Add 60g dried chillies, deseeded and soaked
  3. Add 60g shallots
  4. Add 2 birds eye chillis
  5. Add 25 g garlic cloves
  6. Add dried shrimp
  7. Add dried scallops
  8. Blend 8s/Sp6. Scrape down sides.
  9. Add brown Sugar
  10. Add light soy sauce
  11. Add rice wine and fish sauce
  12. Add chilli flakes
  13. Saute 30min/120deg/sp2.
