Broccoli Salad with Craisins and Almonds

Salad

  • 1 half head of broccoli florets, (roughly chopped)
  • 1 carrot, (roughly chopped)
  • 1 Green Apple - skin on and quartered, (cored if you like)
  • 1/4 red onion
  • 1 stick of celery, (roughly chopped)
  • 1 red capsicum, (seeds removed and roughly chopped)
  • 1 Handful of Craisins
  • 100 g Slivered Almonds (Toasted)

Dressing

  • 100g mayonnaise, (Pg 55 of Everyday Cookbook - made with a Clove of Garlic and Apple Cider Vinegar)
  • Raspberry or Pomegranate Syrup

Recipe's preparation

  1. Place carrot, broccoli, apple,celery, onion and capsicum into the bowl.

  2. Chop for 4 - 6 seconds, speed 5 until the desired texture is reached.

     

  3. Add craisins, slivered almonds and dressing ingredients to bowl.

     

  4. Stir on reverse, speed 2 - 3 until combined.

     

  5. Adjust salt and syrup to taste

    Fabulous recipe, I love the addition of craisins. I make it for lunch and add a small tin of tuna on top
