Tip

Garnish with cracked pepper to taste.

This is a perfect substitute for mashed potato.

Serve under casseroles, slow cooker meals or with any meat / chicken or fish dish.

This is a very easy, forgiving and variable dish.

Once you get used to making this, you will feel comfortable making changes & adjustments you suit your liking.

The Stock paste is optional, you can use liquid stock in place of water & paste, or even stock powder. If you  use the full amount of salt in your paste, you may want to use the lower amount.

  • For the cream I used coconut

For the cream I used coconut cream and instead of paremsan i used cheddar. Gave it a generous sprinkling of rosemary and thyme and oooooh my yumminess. I managed to stop eating it out of the thermoserver long enough to bake some off into fries. Thanks for the recipe. Will definitely be making again. Also left out Philly

  • Worked very well! I used

Worked very well! I used leftover pouring (about 50ml) & sour cream (about 100ml) and made the rest up with milk. Very rich! We only had a small amount with dinner (slow cooked beef brisket) then I chilled the leftovers in a lined tin and baked them as chips the following day (my 6mo particularly liked them!).

I made this tonight and my husband loved it! I used condensed milk instead of cream.

This made a very large quantity - I'm hoping to use the leftovers to make polenta fries for tomorrow night's dinner.
