Sweet Corn & vege fritta's

Ingredients

Batter

  • 120 grams Cheese cubed
  • handful Green beans, trimmed
  • 3 Fresh Corn on the Cob
  • 3 eggs
  • 100 grams Milk of your choice
  • 130 grams Gluten free plain flour, I use White Wings
  • 1 tsp GF baking powder
  • caramalised onions, totally optional!

Recipe's preparation

    To make batter
  1. Weigh cheese into bowl and add beans. 


    Chop on speed 5/6 for 4-5 seconds


    Take the corn off the cob with a sharp knife and add to the bowl


    Weigh other ingredients into the bowl


    Mix counter-clockwise operation speed 4 for 30 seconds


     


    Heat a frypan and make fritta's/pikelets/mini pancakes flipping when brown on one side.


     


    Serve with a salad for an easy lunch or with bacon and avocado for lunch or breakfast!


     


    Add other veges - carrot, zuchinni, pumpkin as you wish. You could add ham/bacon/chicken... what ever needs using up basically!
