Sweet potato patties

  • 2 stalks coriander
  • 500 grams water
  • 400 grams potato
  • 500 grams sweet potato
  • 60 grams Curry paste
  • 150 grams plain flour
  • 400 grams cauliflower
  • 1 onion
  • 1 egg
  • 1 package dried bread crumbs
  • Oil for frying

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. place potatoe and sweet potatoes in varmoa dish

    2. cauliflower in simmering basket

    3. Add water to jug cook 25mins Verona temp speed 3

    4. Once cooked remove basket and discard water

    5. Add onion and coriander to jug and chop 3 sec speed 7

    6. Scrape bowl

    7. Add salt, pepper, curry paste mix 3 sec speed 3

    8. Add vegetables to jug

    9. Mix 10 sec speed 4

    10. Scrape down side and mix 10 sec speed 4

    11. Add egg and flour mix 20sec speed 6

    12. Shape mixture in to small patty size shape

    13. Toss lightly in breadcrumbs

    14. Heat oil in large pan over medium heat cook patties 4 minutes each side or until golden and heated through

    15. Drain on paper towels

    16. Continue till all mixture is used

    17. Sever with lime wedges and sweet chilli sauce can be served hot or cold
