Zucchini & Sweet Potato Fritters

  • 500 grams zucchini
  • 250 grams sweet potato, peeled
  • handful fresh spinach leaves
  • 1 red onion, small
  • 2/3 Cup Almond meal
  • 1.5 tbsp parsley leaf, fresh, chopped
  • 1.5 tbsp fresh coriander, leaves and stalks, chopped

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Use the TM to prepare
  1. Chop zucchini 3 seconds, speed 5 and wring out excess juices in a tea towel. Add to a large mixing bowl. (If you prefer you can mix in the TM bowl)

    Chop sweet potato and onion 3 seconds, speed 5 (if you want the veg finer, chop a couple more seconds). Add to the zucchini.

    Add the remaining ingredients and give a good mix together.

    Use an ice cream scoop to measure portions onto a lined baking tray. Flatten.

    Bake for 22-25minutes at 176c or you could pan fry however they are very soft and are likely to dismantle in the frying pan.

    BE CAREFUL WHEN HANDLING AS THEY ARE VERY SOFT. They freeze well and make a great healthy side.

  • A really good recipe. I added 1tsp chicken stock...

    A really good recipe. I added 1tsp chicken stock paste and some pepper and cooked them in the frying pan. I don’t touch them until just as they are ready to turn over. This seems to help with keeping them in one piece. A great way to smuggle more veggies into a meal!
