Best Ever Pumpkin Soup

Ingredients

6 portion(s)

Soup Ingredients

  • 1 brown onion
  • 1 clove garlic, peeled
  • 20 grams olive oil
  • 650 grams pumpkin
  • 450 grams sweet potato
  • 2 tablespoons vegatable stock paste
  • 1 teaspoon paprika
  • 600 grams water

Recipe's preparation

    Soup
  1. Add onion and garlic to bowl, chop 7 sec/speed 5

    Scrape down sides of the bowl and add olive oil and cook for 6 min/varaoma temp/speed 1

    Chop Pumpkin & Sweet potoato into small chunks (approx 4x4cm)and add to the bowl once onion is cooked.

    Add water, stock, & paprika. Cook for 20 min/speed 1/reverse/ 100 deg.

    Make sure vegatables are very soft (if not cook for another 5 min) and the blend 1 min/speed 5 gradually increasing to speed 9.

    Serve with a spoonful of cream or sour cream if you desire!

Tip

Suitable for TM 31 and TM5

If you are using a soft skin pumpkin you can keep the skin on and use the seeds however you may need to blend a little bit longer.

    Fantastic soup. The sweet potato addition really provides the creamy texture without the need for whole cream. The entire family loves it (except 2-yr-old who refuses to try it at the moment!). 5-yr-old asks for second helpings and husband asks for it to be a regular weekly meal. Can't really get much better than that!
    I've cooked the recipe as listed above - fantastic. Also cooked it with the addition of some greens (silverbeet & pakchoy) with no change to the flavor, only the colour.

    Thanks for an easy and delicious recipe. I love that this doesn't have cream in it cause I've never got that in the fridge. Mine is a little runny but that's because I have a TM31 and didn't want to use the full quantity of veg and water and obviously added too much water for the veg I had. I will also add a little bit of chilli to mine as I like a bit of spice but this is perfect for my 17month old. Thanks again.

    Castello: I'd call it somewhere in the middle, not overly thick but not runny. If you want it thick, just put a bit less water in. You can always add some more water at the end and mix it in if it is too thick.
