Best Ever Pumpkin Soup

Ingredients

6 portion(s)

Soup Ingredients

  • 1 brown onion
  • 1 clove garlic, peeled
  • 20 grams olive oil
  • 650 grams pumpkin
  • 450 grams sweet potato
  • 2 tablespoons vegatable stock paste
  • 1 teaspoon paprika
  • 600 grams water

Recipe's preparation

    Soup
  1. Add onion and garlic to bowl, chop 7 sec/speed 5

    Scrape down sides of the bowl and add olive oil and cook for 6 min/varaoma temp/speed 1

    Chop Pumpkin & Sweet potoato into small chunks (approx 4x4cm)and add to the bowl once onion is cooked.

    Add water, stock, & paprika. Cook for 20 min/speed 1/reverse/ 100 deg.

    Make sure vegatables are very soft (if not cook for another 5 min) and the blend 1 min/speed 5 gradually increasing to speed 9.

    Serve with a spoonful of cream or sour cream if you desire!

Tip

Suitable for TM 31 and TM5

If you are using a soft skin pumpkin you can keep the skin on and use the seeds however you may need to blend a little bit longer.

    Yum recipe, thanks! I changed a few things around too, because of what I had on hand - used carrots instead of kumara, & a bit of cabbage. I also added half a tsp of curry powder, & for the stock I used my homemade bacon stock. Delicious!

    Love this recipe!

    Used skinny mixers stock paste (way better than BCB one)
    Added an extra garlic clove, and a splash of thickened cream at the end maybe a quarter cup.

    Also added a teaspoon of curry powder same time as felt it need a boost.

    Highly recommend this recipe. I did make a few alterations as I didn't have enough sweet potatoes so I did half sweet potatoes and half normal potatoes. I also swapped out the paprika for curry powder!

    Cooked this tonight in my TM6. It was quite nice, but missing a bit of flavour for us.
    I will be adding 1 tspn cumin to the mix and a carrot next time. I also added 3 cloves of garlic instead of one.

    Otherwise nice and will use this method again. Smile

    Agree that you need to take care blending at the end in a TM31, I did one minute at around speed 6 and that was fine. Beautiful smoked flavour from the paprika, and sour cream balances it nicely tmrc_emoticons.-)

    I love this recipe. We make it almost weekly and the whole family enjoys it especially my 4yo. I just use 1100g of whatever vegetables fit the colour profile of pumpki soup ie. pumpkin, sweet potato, mushrooms, cauliflower, carrots and parsnip.

    Love love love this soup. I cook it all the time but this quantity is too much for a TM31 to cook and more so to blend at hot temperature so please take care. Two batches or wait til cooled.

    Absolutely delicious. I had no sweet potato but used potato instead. Added chilli flakes instead of paprika. Sprinkled with parley as a garnish. Couldn't stop at one bowl.

    This is my fave pumpkin soup too! I add about 50-70 mls of honey when I blitz the soup for the 1-minute at the end and the add about 100mls cream and blitz for about 10 seconds. My hubby (who thinks he's a pumpkin soup connoisseur) said not to try anymore pumpkin soup recipes as this one is perfect! 😂👍

    It's so chilly outside tonight so this was the perfect dinner. I used 100mls less water to make it a little thicker. Definitely needed the extra 5 minutes cooking time as the pumpkin came from the fridge and wasn't completely soft after the 20mins. Was worth cooking a little longer. The teaspoon of paprika gives it a fuller, rounder flavour and finishing with a big dollop of sour cream and crunchy bread really completed the meal. Will definitely be on high rotation in this house!

    made this yesterday for hubby’s work lunch and it’s been givin a thumbs up! Had no sweet potato so swapped for a large carrot, and also added 2 soup spoons of tomato paste (that was purely to try and get my picky toddler to try it) but it ended up being yummy!
