  • 1 clove garlic, peeled
  • 20 grams olive oil
  • 650 grams pumpkin
  • 450 grams sweet potato
  • 2 tablespoons vegatable stock paste
  • 1 teaspoon paprika
  • 600 grams water

Recipe's preparation

    Soup
  1. Add Onion and garlic to bowl, chop - 7 sec/sp 5

    Scrape down sides of the bowl and add olive oil and cook for 6 min/varaoma temp/sp 1

    Chop Pumpkin & Sweet potoato into chunks (approx 4x4cm)and add to the bowl once onion is cooked.

    Add water, stock, & paprika.  Cook for 20 min/sp 1/reverse/ 100 deg.

    Make sure vegatables are soft (if not cook for another 5 min) and the blend 1 min/speed 5 gradually increasing to speed 9.

    Serve with a spoonful of cream or sour cream if you desire!

Tip

Suitable for TM 31 and TM5

This recipe is very versatile, you can increase the quanity of pumpkin and sweet potato, if you do this fill the bowl with water to approx 5 cm below where the vegetables come up to.

If you are using a soft skin pumpkin you can keep the skin on and use the seeds however you may need to blend a little bit longer.

    Love this! Hubby, 3 year old and 6 month old loved it. i usually use chicken stock as substitute for water as i always find them bland .. but my goodness this was not short on flavour AT ALL! 

    i did a slight change - with 2 tblsp of veggie stock, i used 1 tblsp or thermy veggie stock & 1 tblsp of thermy chicken stock paste (thinking it would be bland) but it was great .. could use either 2 of chicken stock paste or veggie stock paste

    well done - straight to the collections for me!

    This was delicious. I ditched the paprika and replaced it with 2 heaped teaspoons of red curry paste. I also didn't have any vegetable stock paste so used two chicken stock cubes. Yum tmrc_emoticons.)

    Always turns out delish and enjoyed by us and our 1.5 and 4.5 year olds. Sometimes I also chuck in a carrot as well.

    When I serve for my husband and I, we usally put a heap of baby spinach in the bottom of our bowls and put the soup on top. It adds some more texture to the soup and some greens too.

    I simply LOVE pumpkin and kumara soup and this one has quickly become my "go to" recipe .... Discovered it a few weeks ago and think I've made it about 10 times since then .... The temperatures here in NZ have cooled somewhat so perfect for lunches on a cool day (and oh-so thick and delicious!)  Thanks for a wonderful recipe - I love it as it is (usually I am a add curry to my pumpkin soup but am hesitant in case I don't enjoy it as much as I do the original) tmrc_emoticons.)

    I've just made this for work lunches this week. It tastes fabulous just as it is and doesn't really need anything creamy added. I added a tsp of curry powder to the original recipe, but it could easily have been left out. So easy, I don't think I'll ever make soup on the stove top again. tmrc_emoticons.)
