Biltong Soup
- 80 g Butter
- 160 g flour
- 1 tsp ground black pepper
- ½ tsp ground nutmeg
- ½ tsp Ground Coriander
- 300 g Milk
- 3 tbsp beef / vegetable stock paste
- 1000 g water
- 160 g Cheddar cheese
- 200 g Sliced biltong, available from some butchers or any South African shop
- 80 g cream

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place cheese in bowl & grate 10sec / speed 5.5. Place in a separate bowl for later use
Without cleaning the bowl, place 160g of the biltong in bowl & chop 15sec / speed 5.5. Add to bowl of cheese
It is not necessart to wash the bowl. Place butter in the bowl & melt 3min / 100 degrees / speed 1
Add flour & cook 3min / 100 degrees / speed 1
Add pepper, nutmeg, coriander, milk, water & stock paste & cook 15min / 90 degrees / speed 3 with MC off (if you prefer a thinner soup, reduce time to 12min)
Add cheese, biltong & cream & mix 1min / "Counter-clockwise operation" speed 2
Serve immediately & garnish with remaining biltong slices
