Broccoli and Leek Soup

  • 1 leek and quartered
  • 1 Broccoli Head
  • 2 potatoes medium, peeled and halved
  • 15 grams Butter
  • 1 heaped tablespoon Vege Stock Concentrate
  • 600 grams water
  • salt and pepper to taste
  • sour cream to serve
  • handful of chopped shallots, to Garnish

Recipe's preparation

    Broccoli and Leek Soup
  1. Place Leek in to the mixing bowl and chop for 3 sec/ speed 7.

  2. Scrape down sides of the bowl.

  3. Add Butter and cook 3min/Varoma/speed 1

  4. Add Broccoli and Potatoes and chop 15 secs/sp 7 using Spatula to stir at the same time .

  5. Scrape down sides of bowl again and add water and stock concentrate.

  6. Cook 15 mins/ 100degs/ sp 1 .

  7. Blend 1 min gradually increasing speed to sp 9 .

  8. Pour in to Thermoserver and when ready to serve season and serve with lashings of sour cream and garnish with shallots .

    I made this soup after making the Chicken Tart by Dani V. Didn't wash the bowl, as it had lots of flavour from the tart fixings.

    I also added left over duck stock to add some extra flavour. Great consistency and look forward to having it later. VERY simple to whip up.

    I found this soup bitter and lacking flavour. Added cream and pepper which improved slightly however also added lots of sour cream, shallots and parmesan after serving to make it edible.
