Califlower soup with parmesen and bacon dust

  • 150 g bacon
  • 60 g Parmesan cheese, grated
  • 950 g cauliflower, cut into pieces
  • 3 tablespoons Vegetable stock paste
  • 900 g water
  • 25 g Butter
  • 1 brown onion, halved

Recipe's preparation

    Bacon Dust
  1. Preheat oven at 200c, Line a baking tray with baking paper, lay out rindless bacon (no fat) bake for 20-25 mins or until crispy.
    Lay bacon on paper towel to absorb liquid.
    Once cooled add to mixing bowl and mill 10 sec speed 9
    Set aside.
  2. Parmesan Cheese
  3. Add to bowl, mill 10 sec speed 9 set aside
  4. Soup
  5. half onion, chop 5 sec sp 7 scrape down bowl, add 10 g butter,cook 5 mins 75c sp 3
    Add Califlower, water, stock cook 20 mins/100c/sp1
    add remaining butter cook 5 mins/100c/sp1
    blend 1 min speed 5-9
    sever soup hot topped with parmesan cheese and bacon dust.
