Cauliflower and Apple Curried Soup

Ingredients

15 litre(s)

Soup

  • 500 grams cauliflower pieces
  • 250 grams Granny Smith Apples, peeled and cored
  • 1 onion brown, Chopped roughly
  • 15 grams curry paste (your choice), Make your own if time permits
  • 750 grams chicken stock
  • 150 grams light cream
  • salt & pepper / seasoning to taste
  • crispy bacon pieces, To garnish
  • 1 heaped tablespoon EVOO or butter, Or bacon fat

Recipe's preparation

    Soup
  1. Heat oil/fat in TM bowl. Add chopped onion and cook varoma heat for 4 minutes speed 2.5. Add curry paste and cook off for a few more minutes. Add chopped cauliflower apples and stock and cook 25 minutes 90 degrees  speed 2. Blend beginning with lower speed increasing slowly to speed 8. Stir in cream taste and adjust seasonings if necessary and serve with crispy bacon and /or  croutons.

    tmrc_emoticons.)hi Anne, this recipe is really tasty and the addition of the apple with its sweet tartness surprisingly balances well with the curry creating a well rounded wholesome flavour. It is very warming on a chilly day served with crusty bread and lashings of butter. Perfect comfort food.you can also top with a little grated Parmesan if liked. I am looking forward to trying lots of soup recipes posted here this winter as this is my first winter with my 'Thermie'. If you are not sure try a half portion. I think you will like it, let me know what you think. Your version is very nice as well.

    Hi Panoukla long time since I've heard from you. This sounds really different. How do apples and cauliflower go? It's not a combination I would have thought to use! I made some cauliflower soup in T/X on Fri. just the way I always used to make it with leek onion garlic and bacon.  Regards Anne tmrc_emoticons.)
