Cauliflower and Broccoli Coconut Soup

  • 200g broccoli florets
  • 300g cauliflower florets
  • 1 brown onion
  • 2-3 garlic cloves
  • 1/2 tsp chilli flakes
  • 1 Tbsp coconut oil
  • 1 Tbsp vegie stock
  • 2 Tbsp Broth of Life chicken bone broth powder, (optional)
  • 500g water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cauliflower and Broccoli Coconut Soup
  1. Place broccoli and cauliflower florets on an oven tray and drizzle with some olive oil or coconut oil and roast for about 30 minutes in a 180 degree oven.  Check regularly, as the broccoli will start to burn before the cauliflower is done.  Remove broccoli from oven early if needed.

     

  2. While broccoli and cauliflower is roasting, place onion (chopped in half), garlic cloves and chilli flakes into bowl and chop for 3 seconds on speed 5. MC on.

     

  3. Add coconut oil and saute for 5 minutes, 100 degrees, speed 1. MC on.

     

  4. Add cooked cauliflower and broccoli to bowl along with vegie stock, bone broth powder (if using), and water and cook for 15 minutes, 100 degrees, speed 1. MC on.

     

  5. Blend for 45 seconds, starting at speed 5 and slowly increasing to speed 9. MC on.

     

  6. Add coconut milk and blend for a further 15 seconds at speed 9. MC on.

     

  7. Enjoy!

Tip

If you don't use the bone broth powder, this recipe becomes a delicious vegan soup.

    Made this tonight. Very quick and very delicious. I used a fresh chilli and it added a nice bit of heat.  Thanks for a nice flavoursome some recipe tmrc_emoticons.)
