Cauliflower, Zucchini & Fennel Soup

Cauliflower, Zucchini & Leek Soup

  • 80 g onion, peeled and cut in half
  • 2 clove garlic, peeled
  • 20 g Butter
  • 1 tbsp TM stock concentrate
  • 700 g water
  • 300 g cauliflower
  • 300 g zucchini
  • 150 g fennel

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Place onion and garlic into TM bowl. Install Measuring cup and chop 1 sec / speed 7, scrape down the sides.
  2. Add butter, install measuring cup, saute 3mins/Varoma/Speed 1
  3. Place all vegies into the TM bowl. Add water and stock. Install measuring cup. Cook for 20mins/98º/Speed 2.
  4. Puree for 1 min, starting @ 5, gradually increasing to speed 9. Watch for overflow at the higher speeds.
  5. Consume immediately with crusty bread. Add salt and pepper to taste. If you like chilli, add some chilli sauce or chilli powder to taste to individual servings to taste. Enjoy!!!! 😍
