Chicken, Vegetable and Quinoa Soup

Ingredients

4 portion(s)

Chicken, Vegetable and Quinoa soup

  • 2 clove garlic
  • 1 brown onion, halved
  • 30 g olive oil
  • 250 g sweet potato, chopped into 1cm pieces
  • 150 g Swede, chopped into 1cm pieces
  • 750 g water
  • 2 tbsp Thermomix Stock
  • 100 g quinoa, rinsed
  • 500 g tenderloins, chopped into 2cm pieces
  • 1 carrot, chopped into 1cm pieces
  • 100 g Celery, chopped

Recipe's preparation

    Chicken, Vegetable and Qunioa Soup
  1. 1. Place garlic and onion in Thermomix bowl and chop for 3 seconds / speed 7. Scrape down sides of bowl.


     


    2. Add oil sauté for 3 minutes /Varoma / speed 1.


     


    3. Add sweet potato, swede, 600g water, stock concentrate and quinoa and cook for 5 minutes / 100 C / counter-clockwise operation/Gentle stir setting


     


    4. Add chicken and cook for another 6 minutes / 100 C / counter-clockwise operationGentle stir setting


     


    5. Add remaining vegetables and remaining water and cook for another 15 minutes / 100 C / counter-clockwise operationGentle stir setting.

    This is delicious!! As I didn't have swede I replaced with potato. Used approx 50g of millett instead of quinoa and only 600g of water. Have made before with quinoa and was good too but think I prefer the millet. Never used it before so was an experiment which paid off. Thanks for sharing.

    This was delicious. I also left out the chicken as some reviewers have suggested, but for a change for work lunches I added some shredded pre-cooked chicken afterwards. I don't eat onion or garlic but added extra celery and carrot, and used the TM chicken stock paste, and it was absolutely beautiful. I left it chunky and it was definitely more like a stew than a soup as there wasn't a lot of liquid, but next time will try blending it for something different.

    Yum! I didn't have swede so just added extra sweet potato (which is one of my favourite veggies). It's a delicious, hearty soup, but next time - and there will be a next time - I may leave the chicken out. I found the chicken a little dry/chewy, not really sure how to explain it. I think it's a substantial enough soup that it will be just fine without.

    Thanks so much for posting, I can see this becoming a winter favourite.

    Thanks for sharing this great recipe! I used New Zealand Hoki fillets instead of chicken and added one tablespoon of white wine. It is yum and health.

    loved this soup... We've never had quinoa and just love that it makes the soup thick without being a creamy soup... Did add a chilli with the onion & garlic, also had pumpkin instead of sweet potato, parsnip instead of swede and added potato, zucchin.... Love that it's versatile... Thanks...

    Amazing!  This is a very delicious soup (and it feels like a big bowl of health going into ya!)  I didn't have any swede so put in corn kernels and carrot (as well as the sweet potato as per the recipe).  I also used chicken thighs instead of tenderloins.

    The soup was very thick and hearty - I think I'd add some more water and a touch more stock next time.  I also gave it a good season with salt and pepper.

    Will definitely make this one again!

    Yum! I just made this and I loved it!  I changed it up a bit with what I had in the house but it turned out great.  I only had half of the amount of chicken in the fridge but I bulked it up by adding a quarter of a head of cauliflower at step 5 and some parsely at that point as well.  I also subbed swede for parsnip as that was what I had and added celerly at step 1 to intensify the flavour.  Great, quick, one pot, tasty meal.  Cheers!
