Creamy zucchini soup

  • 80 g Cashews
  • 250 g Zuchinni, roughly cut
  • 1 onion quarted
  • 700 g water
  • 3 teaspoons vegetable stock paste or chicken stock paste

Recipe's preparation

  1.  

    Place cashews in TM bowl for 10 secs on 8. Set aside 

    place zucchini and onion in TM bowl chop 4-5 secs on 5. Add stock paste and water.  Return blended cashews.

    Cook for 12-15 mins 100 degrees on speed 1 . Cooking time may vary, have paper toweling over lid  loosely to prevent spitting.

    Blend soup on speed 7 about 4 secs at a time when cooled a little .

Tip

I first had this soup at a thermo class using broccoli. I did  not write down recipe  so i have played around with quantities and flavours that I like. The cashew makes a lovely creamy texture without any dairy. I might try almonds next time.

    Very quick to make. Flavour was nice, very creamy and couldn't taste the flavour of the cashew nuts. I'ts a good soup to cook when your in a hurry without having to add to many ingredients. Must try this one if you like zucchini, I also added garlic. Yum!

  • I made this with almonds as I

    I made this with almonds as I didn't have cashews in the cupboard. I made double the batch so I could freeze some and added 2 cloves garlic, potato and a tsp of chicken stock. Was too large for the bowl so had remove a bowl then add it back later. I was surprised at how good it was. Different texture. Will definitely try again but with cashews
