  • 350 grams pumpkin cubed, butternut
  • 500 grams sweet potato cubed
  • 2 carrots, cut roughly
  • 1 level tablespoon curry powder
  • 45 grams Butter
  • 1 brown onion
  • 1 garlic clove
  • 2 tablespoons Vegetable stock paste
  • 1 sachet french onion soup mix
  • 1 can coconut cream
  • 500 grams water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    pumpkin and sweet potato soup with coconut cream
  1. Roughly cut large onion and place in bowl with garlic glove. Chop on speed 7 for 3secs. Scrape down sides then add curry powder and butter.

    Saute for 3mins on varoma speed 1.

    Place remaining ingredients all in the bowl and cook for 20mins on varoma speed 1.

    Blend for 30-40secs gradually increasing speed from 1-8.

    Serve with sour cream and cristy bread roll of desired.

    This is the absolute best pumpkin and sweet potato soup that I have EVER made....its extremely tasty and very creamy....i added 2x cams of coconut cream and 200 mls of water. ..and I didn't have any onion soup mix....i will be making this every week from now until the end of winter.. .OMG!

    Beautiful Soup!  My 11 year old made this and multiplied it by 4 because she had enough pumpkin.   I thought we would be eating it for a while...24 hours later it was all gone as we enjoyed it so so much.  Thnaks for a great recipe.

    Nice without the soup mix, and I only used 15g butter, 1 Tbsp of stock, and 1/2 Tbsp of curry powder as we aren't big curry eaters.  Flavour still good.
