  • 1 leek, or small onion, peeled and halved
  • 1 tomato, cut into 1/4s
  • 1 Celery stalk, cut into 4, optional
  • 20 grams olive oil
  • 500 grams chicken or vegetable stock
  • 1 level tablespoon cornflour, mixed to a slurry with 2 tablespoons of water
  • 1 egg, lightly beaten
  • 1/2 teaspoon sesame oil
  • Chopped Chives to Garnish, optional

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    To make the soup
  1. 1. Place onion, tomato and celery (if using) intoClosed lid. Slice peeled and washed leek into 2.5 cm pieces.

    2. Chop on sp 5, 10 seconds.

    3. Add oil toClosed lid, and cook on varoma, sp 1, Counter-clockwise operation, for 5 minutes. Scrape Closed lid.

    4. Add chicken stock. Cook on Varoma on sp 2, Counter-clockwise operation, for 8 minutes.

    5. With motor running on sp 2, add cornflour slurry through mc hole, app 1-2 mins, until thickened.

    6. Bring soup back to a rolling boil on 1-2mins/Varoma, sp 2/Counter-clockwise operation

    7. While soup is boiling rapidly and still on sp 3/ Varoma, pour beaten egg blended with sesame oil through MC hole.

    8. Stop whizzing at this stage.

    9. You should see some strands of noodle like egg strands.

    10.Garnish with chopped chives and serve.

Tip

This is a really nourishing, super easy soup to make.

You are limited only by your imagination. Add more veggies, chicken, whatever you fancy.

This recipe can easily be doubled.

The main thing is to make sure the soup is on a rapid boil when you add the beaten egg. This is what gives you the "noodles".

    It was a very quick and easy soup to make however it didn't have enough flavour. If I was to make it again, I would add more vegetables.

    Made this just now. Substituted guar gum for the flour because I wanted to skip any unnecessary carbs, and subbed in zucchini for the tomato and celery because I didn't have them. Only used spring onions.

    Delicious!!! Moving this to my regular rotation. Thank you!!

    i added extra 250mls of stock because I like my soup a littler thinner.

    DELICIOUS !!! .... and HEALTHY !!! .... LOVED the egg strands !!!! .... I doubled the recipe and used cherry tomatoes cos they were on special !! .... I used vegetable stock so it was vegetarian, though the egg strands made you feel like it has chicken in it .... I tried it both with and without the sesame oil .... both were nice .... will definitely be making again .... great recipe
