French Lentil Soup with Tarragon and Thyme

Ingredients

Soup

  • 1 --- onion, (small)
  • 1 carrot, (small)
  • 2 cloves garlic
  • 10 grams olive oil
  • 1 teaspoon dried tarragon
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon Hungarian paprika
  • 3 tomatoes
  • 750 grams water
  • 190 grams French lentils
  • 1 bay leaf
  • 0.5 teaspoon salt
  • pepper, (to taste)

Recipe's preparation

  1. Place onion, carrot and garlic in TM bowl and mix 5 SEC/SP 5.

    Add oil and sauté 5 MINS/VAROMA/SP 1.

    Add tarragon, thyme and paprika and sauté for a further 2 MINS/VAROMA/SP 1. Dice tomatoes during this step.

    Add water, diced tomatoes, lentils, bay leaves, salt and pepper and cook 45 MINS/100C/Gentle stir setting, or until lentils are soft.

Tip

I am certain you could pre-soak the lentils to reduce cooking time, although this can split the lentils and make the soup more mushy. 

I used water and find this soup salty enough, but you could use vegetable stock.
