Fruit Soup

Ingredients

  • 1 cantaloupe, peeled and deseeded
  • 2 x 250g punnets of fresh strawberries, hulled
  • 100 gram seedless green grapes
  • 3 large Granny Smith Apples, peeled and cored
  • 50 grams raw sugar
  • 1 med.-large lemon, juiced
  • 2 cups water
  • 1 orange, juiced (save rind for garnish)
  • sour cream, for garnish

Recipe's preparation

  1. Combine cantaloupe, strawberries, grapes, apple, sugar, water, and lemon juice in TMX bowl; bring to the boil - approx 10 minutes at 100 degrees C, speed 2. Reduce heat to 90 degrees, and simmer with MC off for 15 minutes, speed 2. Add orange juice to fruit mixture.  Blend until smooth. Gradually bring the speed up from 1 to 9 - approx 40 seconds.  Transfer to jug or tureen and chill.


    Spoon into bowls, garnishing each serving with a dollop of sour cream and orange rind.


    This recipe actually made 14 ladles of soup, so at a party if using smaller glasses, it could stretch to about 20 guests.

    Thank you so much for the vote of confidence, margninness .  I am glad you tried and enjoyed this recipe.  I agree with you it makes rather a lot. Any extra can easily be frozen into fruity icecubes and maybe whizzed into sorbet with a bit of sugar later.  tmrc_emoticons.)

    Thanks for this lovely soup. I had my first taste of fruit soup in Hungary made with sour cherries. It was heaven in a bowl. Since then I've been searching for fruit soups and your recipe is perfect. It does make a huge batch so I cut the amount in half as only two in our family. I never know if to serve it as first course or as desert......tmrc_emoticons.;)
