  • 150 g Soft white breadcrumbs, See EDC
  • 40 g white wine vinegar
  • 1 Lebanese cucumber peeled & roughly chopped
  • 1 clove garlic peeled
  • 1 green capsicum, sliced
  • 1 red onion halved
  • 120 g EVOO (olive oil)
  • 1000 g tomatoes, ripe , peeled, To peel tomatoes - pour boiling water over tomatoes in a heat proof bowl & with the tip of a paring knife lift skin & the whole skin should peel off
  • 400 g iced water
  • Salt & pepper to taste

Recipe's preparation

  1. addLadd tomatoes to Closed lid blend 15 seconds sp7 set aside in separate bowl

    soak breadcrumbs in vinegar 

    place cucumber, garlic, pepper & onion intoClosed lid sp7 10 seconds 

    add soaked breadcrumbs

    place mc in lid and on sp 4 slowly add oil until all oil uptaken

    add tomatoes,blend into the mixture sp 4 10 seconds add some iced water until correct consistency is reached 

    season to taste with salt & pepper. Chill stored in a glass or ceramic jug (minimum of 4 hours in the fridge) 

    serve & garnish with diced cucumber & ice
