Golden Pear and Pumpkin Soup

  • 700 grams pumpkin, peeled and cut into small cubes
  • 1 litre water, Plus extra for cooking the pumpkin
  • 1 1/2 level teaspoons salt
  • 3 Ripe pears, peeled and thinly sliced
  • 2 heaped tablespoons Butter
  • 70 gram dry white wine
  • 30 grams cream
  • 30 gram Milk
  • 2 level teaspoons cinnamon
  • to taste ground white pepper

Recipe's preparation

  1. Put the pumpkin, salt and cinnamom into the mixing bowl, add water and cook Temp 100/Speed 1 /18 minutesWhile the pumpkin is cooking heat up the butter in your frypan and saute the pears until soften

    Add wine the fry pan and simmer for 3 minutes

    Add pear mix into the mixing bowl and cook Temp 100/Speed 2/10 minutes

    Let cool slighly and the puree for 1 minute starting at speed 1 and gradually increasing up to speed 6

    Add Milk, Cream and Pepper and cook Temp 80/speed 1/3 minutes
