Ingredients

Immunity Boosting Chicken Soup

  • 1 long red chilli
  • 1 zest of one lemon
  • 6 garlic cloves
  • 20g fresh ginger cut into coins
  • 20g parsley stalks (reserve the leaves)
  • 1 medium brown onion
  • 1 large carrot cut into pieces
  • 20g coconut oil
  • 500g diced chicken breast
  • 100g sliced button mushrooms
  • 1 tablespoon chicken stock paste
  • 2 tablespoons Tamari (or soy sauce)
  • 1 teaspoon dried tumeric
  • 1 Pinch Pepper
  • 800g water
  • 100g baby spinach

Recipe's preparation

    Immunity Boosting Chicken Soup
  1. Deseed chilli if preferred and add to bowl with lemon zest, garlic cloves, ginger and parsley stalks and chop 3 seconds, speed 5, MC on. Scrape bowl and repeat until lemon zest is finely chopped.
  2. Add onion to bowl and chop 5 seconds, speed 5. Scrape down bowl.
  3. Add carrot and chop 2 seconds, speed 5 so carrot is still a bit chunky. Repeat at one second intervals if it's too big. Scrape down bowl.
  4. Add coconut oil to bowl and cook for 5 minutes, 100 degrees, speed 1, MC on.
  5. Add chicken, mushrooms, chicken stock paste, Tamari (or soy sauce), tumeric, pepper and water and cook for 20 minutes, 100 degrees, Counter-clockwise operation"Counter-clockwise operation" , Gentle stir setting"Gentle stir setting" , MC on.
  6. Pour into bowls and stir through reserved parsley leaves and baby spinach.

Tip

Squeeze some lemon into each bowl of soup for a lemony kick!
