Recipe is created for
TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Just a quick tip before you start. If you half bacon still quite tasty but if you use full amount be careful with stock paste as it can end up on salty side. You won't need extra salt seasoning at the end and be careful with how much Parmesan you use. You can over salt this soup. Enjoy
Place parsley and basil into TM bowl and chop for 3sec/speed 7. Set aside in seperate bowl
Halve onion and place that and garlic into TM bowl and chop for 3sec/speed 6. Add oil and sauté for 3min/100°C/speed 1 (MC off)
Add bacon or pancetta and cook for 5min/Varoma temperature on "Counter-clockwise operation" + speed 1 and simmering basket on top to prevent splatter
Add vegetables (not zucchini or peas if using), add tomato paste, veggie stock paste and water and cook for 15min/100°C on "Counter-clockwise operation" + speed 1.5 and MC on
Add pasta (optional), zucchini & peas and cook for a further 15min/100°C on "Counter-clockwise operation" speed 1.5 with strainer on
Add rinsed beans, herbs and heat through "Counter-clockwise operation" sp 1.5 for 1 min. Season if needed and serve sprinkled with Parmesan.

Tip
If you don't mind the rustic look or want to purée your soup, you could chop your vegetables beforehand in Thermomix to desired size. Chop zucchini seperately and place aside with frozen peas until required. Enjoy this soup with crusty bread. I prefer to hand dice my vegetables so have not puréed this soup.

This recipe is one of our family's all-time favourites. We have been using it for years and years. It is one of the few dinners that our children will eat, with the added bonus of it being packed with vegies. Thankyou for making this recipe available for everyone to enjoy - we love it!

I used the can of tomatoes and 300ml of water option instead of 700ml of water. I also only had about 60g of bacon so put in a small amount of pepperoni left over from making pizza last week.
it is not too salty...we enjoyed it with crusty bread rolls.

such a versatile soup where you can change it up with variations depending on what you've got on hand at the time. I've made this many times & sometimes added shredded poach chicken & used rice instead of pasta, a massive hit with all. Thank you for sharing.

Great way to use up all the random veggies in the fridge. We made a vegan version with cashew parmesan instead.

This is a really nice soup. I didn't use peas, or borlotti beans. I followed my recipe I used from the Womens weekly cookbook. I put 3 fresh tomotoes instead of tomoto paste. I could have put more vegetables. I didn't but the veggie stock in as I was concerned about the saltiness as I used the full measurement of bacon. This recipe came out thicker than when I cook it on the stove, which is nice. I didn't have any basil either. Yummy all the same.

‘Did you make sure the blades were on reverse? Also, maybe just use less pasta (I only put in about 80g uncooked shell pasta and had no trouble)

Brilliant! I added 50g less water and a can of diced tomatoes. I used a bit less pasta. My veggies were: 2 sticks celery, 1.5 carrots, 1 small zucchini, half a tin of greeb beans (added with the zucchini), a potato and about half a sweet potato. I used 200g of bacon and the veggie stock and the seasoning is just right to me. Thanks!

Delicious! As I added 200g bacon I only used 1 tbls of veggie stock and the seasoning was perfect! I used carrot, zucchini, celery, potato and peas with roughly 800g water. Very hearty, good for the soul! Will make again! Thank you!

Delcious Minestrone. Bacon totally made it tasty. As per people's comments, I added a bit more water to it and some white wine I had open.
Used parley and basil, and chicken stock paste rather than vege. Was still thick but I think the pasta makes that happen. Cook the pasta separately if you don't want this to happen and add at the end.

This SO exceeded my expectations. The vegies were cooked and it was quite thick (which you normally don't achieve until it's rested a day or so). Thank you SO much. I can vouch that the recipe works in a TM31.
