Italian Minestrone Soup

Minestrone soup

  • 1/4 bunch parsley leaves (fresh no stalks)
  • 1/4 bunch Basil Leaves (Fresh)
  • 180 g Brown onion peeled
  • 2 cloves fresh garlic peeled
  • 30 g olive oil
  • 200 g Bacon or Pancetta cut into small strips
  • 600 g Vegetables already diced (ie celery, leek, carrot, potato, green beans, zucchini or frozen peas)
  • 40 g tomato paste
  • 2 tbsp Vegetable stock paste
  • 750 g water
  • 130 g Small pasta shells or of choice
  • 420 g Tin borlotti beans rinsed & drained
  • salt/pepper to taste
  • grated parmesan to serve

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

    Minestrone Soup
    1. Just a quick tip before you start. If you half bacon still quite tasty but if you use full amount be careful with stock paste as it can end up on salty side. You won't need extra seasoning at the end and be careful with how much Parmesan you use. You can over salt this soup. Enjoy  
    2. Place parsley and basil into TM bowl and chop for 3sec/speed 7. Set aside in seperate bowl

    3. Halve onion and place that and garlic into TM bowl and chop for 3sec/speed 6. Add oil and sauté for 3min/100°C/speed 1 (MC off)
    4. Add bacon or pancetta and cook for 5min/Varoma temperature on Counter-clockwise operation + speed 1 and strainer on top to prevent splatter

    5. Add vegetables (not zucchini or peas if using), add tomato paste, veggie stock paste and water and cook for 15min/100°C on Counter-clockwise operation +  speed 1.5 and MC on

    6. Add pasta, zucchini & peas and cook for a further 15min/100°C on Counter-clockwise operation speed 1.5 with strainer on 

    7. Add rinsed beans, herbs and heat through Counter-clockwise operation sp 1.5 for 1 min. Season if needed and serve sprinkled with Parmesan.

Tip

If you don't mind the rustic look or want to purée your soup, you could chop your vegetables beforehand in Thermomix to desired size. Chop zucchini seperately and place aside with frozen peas until required.  Enjoy this soup with crusty bread. I  prefer to hand dice my vegetables so have not puréed this soup.

    This was a lovely soup, mine was very thin and light coloured, but super tasty, I ended up adding a tin of herbed tinned tomatoes to make it thicker, and more red. Very yummy and will make again.

    Delicious! As I added 200g bacon I only used 1 tbls of veggie stock and the seasoning was perfect! I used carrot, zucchini, celery, potato and peas with roughly 800g water. Very hearty, good for the soul! Will make again! Thank you!

    Delcious Minestrone. Bacon totally made it tasty. As per people's comments, I added a bit more water to it and some white wine I had open.

    Used parley and basil, and chicken stock paste rather than vege. Was still thick but I think the pasta makes that happen. Cook the pasta separately if you don't want this to happen and add at the end.

    Great variation here I used a toasted orza pasta (a long grain rice sized patsa) as recommended at our local Italian deli and it was great small pasta went great with the dish. No salt issues would definitely make again  tmrc_emoticons.)

I used a chicken stock paste and followed advice to use only 1 tbsp, glad I did or the soup may have been too salty for the kids. i used carrots, celery, zuchini and frozen peas as veges. as I had no fresh herbs I added some pesto at the end and it turned out well.

    This soup is an easy, tasty way to empty the fridge of stray vegetables. I included a chilli with the onions, and doubled the garlic, to suit my tastes. I must have chopped my potato too small because it didn't survive to the end but resulted in a nice thick sauce. With the softer veges at the end I included mushroom, zucchini, cherry tomatos and frozen peas. The cherry tomatos were obliterated but I expected that!

    I must say I prefer a slow stovetop version with the ability to control the taste and texture a little more, however I was pleasantly surprised with this recipe and will use it again. Thank you - this recipe appealed to me more than the one included in the official cook book. Not too salty at all... I gave it a good seasoning of salt and pepper after taste testing with the herbs.

    Delicious. Simple recipe that creates a fantastic soup. Used potato, carrot, leek, baby spinach and green beans. Had a quick taste when it was cooked and looking forward to having more of it during the coming week. Will be doing this one again. Followed recipe and didn't have any salt issues. Didn't season during cooking though and used middle bacon.

    The perfect dish for a cold winters night. A few comments though. Herbs are not required. Better to manually chop vegetables to give it a better rustic chunky appeal. Brought just one of those vegetable soup mix from the grocery and used what was supplied which included onion, celery, carrots, parsnip, and potato and it was perfect. Instead of pasta shell I used raviolini. End result was a receipe I have been told is a keeper.
