Ingredients

Keto Pumpkin Soup

  • 1 --- brown onion, large
  • 100 grams Streaky Bacon, about 5 rashers
  • 30 grams Butter
  • 300 grams pumpkin, peeled, cut into pieces
  • 300 grams cauliflower, cut into florets
  • 500 grams water
  • 1 tbsp Vegetable stock paste
  • 2 heaped teaspoons curry powder
  • 1 pinches ground black pepper
  • 30 grams cream
  • sour cream or unsweetened yoghurt, to garnish
  • fresh basil, parsley or coriander, to garnish

Recipe's preparation

  1. Place onion and bacon into bowl and chop 3 sec/speed 5
    Scrape down sides of mixing bowl with spatula.
  2. Add butter and saute 3 min/120°C/speed 1.
  3. Add pumpkin and cauliflower and chop 15 sec/speed 7. Scrape down sides of mixing bowl with spatula.
  4. Add water, stock paste and curry powder and cook 20 min/100°C/speed 1.
  5. Add cream and blend 1 min/speed 5-9, increasing speed gradually from speed 5 to speed 9.
  6. Season to taste with salt and pepper. Garnish with fresh herbs and a dollop of sour cream or unsweetened yoghurt.
