Recipe's preparation

    Cauliflower soup
  1. Place water, stock paste, cauliflower, leek, salt and pepper (optional) into mixing bowl and cook 20 min/100°C/speed 1.
  2. Add butter or olive oil and cook 5 min/100°C/speed 1, then blend 1 min 30 sec/speed 5-9, increasing speed gradually.
  3. Serve soup hot with Parmesan cheese, and topped with a sprinkle of bacon dust (optional).

Tip

The original recipe is featured in the Cooking with Thermomix class.TM31 users can find the Cauliflower soup recipe in the Everyday Cookbook on pg 79. You will find another version of Bacon Dust called Virtual bacon dust in Dani Valent's In the Mix on pg 60.Variation:Bacon truffle cauliflower soup: add 150g cooked bacon pieces, to taste when serving and substitute the butter with 1-2 tsp truffle oil for a slightly more decadent flavour.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
