Panera Cheddar Broccoli Soup

Ingredients

6 portion(s)

  • 70 grams onion
  • 100 grams broccoli
  • 130 grams carrots
  • 80 grams flour
  • 55 grams Butter, melted
  • 250 grams Milk
  • 250 grams cream
  • 500 grams water
  • 2 tablespoons chicken stock paste, EDC
  • 130 grams Sharp Cheddar Cheese, shredded
  • 1/4 teaspoon pepper

Recipe's preparation

  1. 1)  Chop carrot and broccoli for 3seconds/speed5 set aside and rinse bowl

     

    2)  Add onion to TM bowl and chop 5seconds/Speed5, add 1 Tablespoon of the butter and cook 5minutes/90C/Speed1

     

    3)  Add the liquid and veggies and flour and cook 8minutes/90C/speed4

     

    4)  Add cheese cook 3minutes/90C/speed2

     

    5) Add pepper and salt to taste

Tip

    i used 50 g cornstarch instead of flour
    i added tarragon
    when serving, I add nutritional yeast and/or hemp seeds
    delishious soup

    i added zucchini and left the cream out to make it lighter. I also didnt bother chopping the Veges before cooking the Nixon. I just put them in and blitzed it once the nion was cooked. I loved the texture of the soup and the flavour. I also doubled the cooking time because the broccoli was still crunchy after 8 minutes.

    This recipe is yum, but i would say not exactly like Paneras! Next time I think i will do half the carrot, there is definitely too much carrot in it.

    OMG!  I am trying this tonight!  I LOVED Panera when we lived in the States tmrc_emoticons.)  Thanks

     

    UPDATE:  I made this last night.  I omitted the cream since I wanted it lower in fat.  I just doubled the milk.  It was REALLY good!  Panera, for those of you who aren't familiar, is a chain restaurant that has "down home" type soups and sandwiches and yummy baked goods.  This recipe was very similar to theirs!
