  • 750 g water
  • 1 tbsp vegetable stock concentrate
  • 12-15 leaves butter lettuce, green, roughly chopped
  • 2 spring onions, roughly chopped
  • 45 g Butter
  • 290 g potato, peeled, roughly chopped
  • ground black pepper, to taste
  • 120 g cream
  • fresh mint, leaves only, to garnish

Recipe's preparation

  1. Place 650 g of water, stock, lettuce, onions, and butter into the mixing bowl, and mix 10 sec/speed 9.

  2. Add potato, and cook 20 min/Varoma /speed 2.

  3. Check potato, if cooked add pepper, cream and remaining water and blend 30 sec and gradually increase to speed 9.

  4. Garnish with mint leaves.

Tip

This can easily be pre-made and left in the fridge for up to 3 days. Simply reheat or serve cold!

    Love this soup. Made it 3 times now and it turns out great every time! 

    I make it dairy free by using Coconut Cream and a little bit of oil instead of butter.

    This is one of the nicest soups I have ever tasted. So easy and quick. Who would have believed lettuce in soup could be so tasty.

    We had this tonight at the Christmas cooking class. I was pleasantly surprised! I wouldn't have ever used lettuce in a soup but I will be making this for lunch tmrc_emoticons.)

    Love this! It is great as a sauce with zucchini slice too.

    To make a half batch, just reduce the ingredients accordingly, and cook for 16mins. Delicious!
