Pumpkin Coconut Soup

Ingredients

4 portion(s)

Soup

  • 2 clove garlic
  • 4 green shallots
  • 2 Chillies
  • 1 stalk lemon grass, fresh, sliced 2cm aprox
  • 20 grams olive oil
  • 30 grams fish sauce
  • 1 tsp Chicken stock powder
  • 500 grams water
  • 500 grams butternut or jap pumpkin., 2cm cubes aprox. do not peal or deseed.
  • 400 grams coconut cream or milk
  • 250 grams green prawns (peeled weight)
  • handfull small leaves corriander leaves torn

Recipe's preparation

    Method
  1. Place garlic,  green shallots, chilli and lemongrass into mixing bowl and chop 3 sec/speed7. scrape down sides of bowl.


    Add oil and saute 3 min/Varoma/speed 1.


    Add pumpkin chop 15 sec/speed7.


    Add water, stock and fish sauce cook 15 min/100 deg/speed1.


    Add coconut milk/cream continue cooking 5 min/100 deg/speed1.


    Blend 1 min/speed 9, gradually increasing from speed 1 to speed 9.


    Place raw prawns into Thermoserver. Pour soup onto prawns. Stir with spatula, place lid on and rest for 5 minuites. serve with corriander leaves sprinkled on top.

Tip

You can make your own coconut milk. 40g coconut and 400g boiling water. Let stand for 2 hours. Place in TM jug and blend 30 sec/speed 9. Strain thru nut milk bag. use liquid in soup.

De-seed your chilli if you dont like it hot.

I used half a red onion if I dont have the green shallots.

Feel freee to add palm sugar if you like a sweeter version.
