Smoky tomato & bacon soup

Ingredients

2 litre(s)

Soup

  • 1 tablespoon EVOO (extra virgin olive oil)
  • 1 large onion quartered
  • 2 Garlic cloves peeled
  • 2 Hot small red chillis
  • 2 tablespoons smoked paprika
  • 1 KG ripe tomatoes, cored, chopped roughly
  • 400G can No-added-salt Tomato puree
  • 1 cube Massel Salt reduced chicken stock cube
  • 750ML Boiling water
  • 80G Lean bacon, trimmed of fat, cut into short strips
  • Basil leaves to serve (optional)

Recipe's preparation

  1. ▪ Place onion, garlic and chilli into bowl. Closed lid

    ▪ Chop 4 seconds / Speed 5. Scrape down sides of bowl. 

    ▪ Add EVOO & cook 3 minutes / Speed 1 / 100°  

    ▪ Add smoked paprika & cook 1 minute / Speed 1. 

    ▪ Add tomato, tomatoes puree & combined stock cube & boiling water to bowl Closed lid

    ▪ Cook 10 minutes / Speed 1 / 100° with MC on. 

    ▪ Let stand for 5 minutes to cool. 

    ▪ Cook for a further 10 minutes / Speed 1 / 90° with MC on. 

    ▪ Let stand on bench for 15 minutes to cool slightly. 

    ▪ Place sliced bacon into a non-stick pan and cook, stirring often, for 7 - 8 minutes or until bacon is crisp. Transfer to a plate lined with paper towel. 

    ▪ Pour half the soup mix into a seperate bowl. 

    ▪ With half quantity of soup in TM Closed lid mix 1 minute / Speed 6 until smooth. Transfer to Thermoserver. 

    ▪ Pour remaining soup mix into TM Closed lid mix 1 minute / Speed 6 until smooth. Add to Thermoserver. 

    ▪ Divide soup into bowls and serve with Sourdough & top with bacon. Sprinkle basil on top if you would like.

  • Wasn't sure if the 2 tablespoons of smokey paprika...

    Wasn't sure if the 2 tablespoons of smokey paprika was a mistake, seemed like overkill so did two teaspoons instead. Soup didn't seem to have as much flavour as I expected, just heat from the chilli.
