Smooth Tomato Soup

Ingredients

Soup

  • 1 medium red onion halved
  • 2 cloves garlic
  • 800 grams tomatoes, blemishes removed
  • 2 teaspoons TM Vegetable stock paste
  • 1 tablespoon TM Worecestershire sauce
  • 2 tablespoons Nuttelex
  • 2 heaped tablespoons cornflour
  • to taste pepper
  • to taste salt

Recipe's preparation

    Directions
  1. Place the quartered red onion and peeled garlic cloves into the Thermomix, chop on 5 for 4 seconds. Scrape down the sides of the Thermomix.

  2. Add tomatoes, TM vegetable stock paste, TM Worcestershire sauce and pepper, cook for 20 minutes on speed 1 at 100 C.

  3. Blend on speed 8 for 20 seconds (carefully increasing speed with the MC on) then sieve through the varoma basket into a thermoserver. Left over pulp can be retained for later use.

  4. Add the nuttelex and cornflour  and ¾ of the tomato mixture to the Thermomix, with MC on but tipped over to allow reduce splashing, and cook at 90 C on speed 4 for 7 minutes.

  5. Add the remainder of the tomato mixture to the Thermomix then cook at 90 C on speed soft Gentle stir setting for 15 minutes.

  6. Add salt to taste and serve.

Tip

Note: most of the tomato mix will strain through the basket quite quickly, use this quantity of tomato mixture at step 3, then strain the rest with the aid of a spoon while the soup is cooking.
