Spicy Pumpkin Soup

  • 1 pumpkin, approx 2kg, cut into 2cm pieces
  • 1 brown onion, sliced if sauteeing, quatered if oven roasting
  • 2 potato, cut into 2cm pieces
  • 1 pinches salt
  • 1 pinches pepper, ground
  • 2 level tbsp olive oil, for vegtables
  • 20 g olive oil, for sauteed onions
  • 1000 g liquid vegetable stock
  • 1.5 level tbsp curry powder, optional
  • 1.5 level teaspoons ground cumin, optional
  • 120 g cream

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180 degrees Celsius (fan-forced) and line a baking tray with greaseproof paper
  2. Place chopped pumpkin and potatoes into a bowl and season with salt, pepper and drizzle with olive oil. Toss to coat.
  3. Add potatoes and pumpkin to a baking tray and bake for 40 min or until the vegetables are soft.
  4. **If using a TM6 refer to Cookidoo® recipe for sauted onion. Follow steps.

  5. Once Cooled, place cooked pumpkin and potatoes in the TM bowl along with the onions.
  6. Mix 10 Sec / Speed 6 MC on.
  7. Add 1/2 of the vegetable stock liquid (500g) and mix 20 sec/ Speed 6. Repeat with the second half of the stock.
  8. If desired add 1/2 tbs of Curry Powder and 1/2 tsp Cumin. Mix 5 sec/ speed 6.
  9. Add cream and mix 4 min/ 80°C / Speed 3Counter-clockwise operation

Tip

** If using older machines, Onion can be added to the baking tray when putting vegetables in the oven. Sauteeing just allows the flavour to be added to the soup.
