THERMOMIX ® RECIPE

Cauliflower, Zucchini & Leek Soup with bacon dust & Goats cheese
- 2 onion, peeled and cut in half
- 3 cloves garlic, peeled
- 30 g olive oil
- 1 tbsp TM vegetable stock concentrate
- 800 g water
- 300 g cauliflower florets
- 300 g Zucchinis, Peeled if you dont want a green soup
- 1 leek, White part only
- 1/4 teaspoon black cracked pepper, to taste

- 6 rashers of short cut bacon
- 40 g goats cheese, crumbled

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Place onion and garlic into TM bowl and chop 1 sec / speed 7, scrap down the sides.
- Add oil, saute 3mins/Varoma/Speed 1
- Add water and stock. Place all veggies into theTM basket, insert basket and cook for 20mins/Varoma/Speed 3.
- Empty veggies from basket int the TM bowl with the water and stock, puree for 1 min ( gradually increasing speed) from speed 1 to speed 9.
- Transfer soup into Thermoserver to keep warm until ready to be eaten. (Thermoserver will keep the soup warm for atleast 1.5 hours).
- cook bacon any way you like until crispy and brown but not burnt.
(You could grill bacon, oven bake, cook in fry pan) - Once cooked pat down with paper towel and allow to cool.
- place in bottom of thermomix with MC on speed 7, 10 seconds. Check if it is fine enough and repeat until desired consistency
- sprinkle bacon dust and goats cheese over soup and serve immediately

Tip
you may like a little more goats cheese, depending on the strength. Also good without the baocn dust and goats cheese but i think its just a bit more special with it!

Lovely base taste but overpoweringly salty. I only used 2 tablespoons of stock paste as 3 sounded too much - should it actually be 3 teaspoons?
